Quick weeknight dinner

I grew up in a small town where the County Fair was absolutely a must-do event. It marked the end of summer, and was a place to see and be seen. You ate delicious junk food from gaudily decorated trailers (like funnel cakes, elephant ears, and candied apples), then rode all the spinny rides until you threw it all up.

One of the food stands that I always remember was the Italian Sausage stand. They had a huge grill, constantly filled with peppers and onions and sausages waiting to be loaded up into a roll and wrapped in foil.

I had a flashback to the fair last night, when my hubs concocted this easy and delicious dinner:

Italian Sausage with Peppers and Onions

  • 3 Sweet Italian Sausages, sliced into medallions (we used Johnsonville because we had a coupon)
  • 2 bell peppers, one green and one red, cut into chunks about the same size as the sausages
  • 2 small onions, peeled and cut into the same sized chunks

Saute sausages until browned and almost cooked through. Add peppers and onions, and continue sauteing until vegetables are tender and sausage is cooked through. Serve in bowls.

You could also serve it over rice, if you like, or leave the sausages whole and serve in Italian rolls, county fair style. Some sliced garlic (added with the peppers and onions) would be a nice addition as well. Add a salad, and you’ve got yourself dinner.
