I have about 10 tons of oregano in my garden. Every year it seems to go to waste. This year, I’m going to try to find more uses for it. This is the first, a recipe adapted slightly from a Jamie Oliver recipe.
Oregano Mustard Vinaigrette
- 6 T olive oil
- 2 T Dijon
- 2 T Red Wine vinegar
- 1 t (or more if you like) chopped fresh oregano
- Salt and pepper to taste
Whisk all together, serve over greens. Especially nice with arugula or mesclun mix.
