Ribs are a specialty of hubs’s. I think this is my favorite of his preparations.
Baby Backs in the crockpot
- 1-2 racks of babyback ribs (we used 1.5)
- Dry Rub (you can find 1000 recipes for this – hubs likes Corky’s)
- 1/4 c apple cider vinegar
- 1/2 a can Beer
- 1 onion, quartered
- 1 apple, cored
Pour the 1/2 can beer in the crock pot. Drink the rest. Add in the cider vinegar. Rub dry rub all over meaty side of your ribs. Place your ribs into the crock pot so that the bones are perpendicular to the bottom of the pot (parallel with the sides – get me?). You’ll have to bend them into kind of a circle. Fit onion and apple slices in and around the ribs. Put the lid on and let them cook for 6 hours on low. Drink one or more full beers while you wait.* Serve with BBQ sauce.
