World’s easiest side dish. Approved by hubs. Convincing kids that they are like french fries is a harder sell.
- Several potatoes, cut into smallish pieces (there is really no science to this. I used fingerling and red potatoes because that’s what I had)
- 1 onion, sliced
- Olive oil, a couple good glugs
- Salt, to taste
Preheat the oven to 375 while you’re readying the potatoes and onions. Spread them out on a bar pan, add the olive oil and mix it around with your hands until everything has a nice olivey coating. Sprinkle with salt. Pop in the oven for 20-30 minutes until potatoes are cooked through and crispy on the outside.
