This is a very peanutty version of peanut sauce. Hubs thinks too peanutty. I disagree.
- 3/4 C peanut butter
- 1 garlic clove, pressed
- 1/2 C boiling water
- 2 T cider vinegar
- 2 T brown sugar
- 2 T soy sauce
Mix peanut butter, garlic, and water in a large boil. Whisk until smooth. Add remaining ingredients and whisk until sugar is dissolved.
Serve over spaghetti with lots of cilantro and roasted peanuts on top, and a squeeze of lime. I like to throw in a little steamed broccoli too.
