Kettle corn

I love popcorn on the stove top so much better than the microwave kind. It’s super easy, and I think it’s a healthier snack than the Ritz crackers and chocolate the 5yo is always asking for. Today she wanted it “sweet.”

Kettle Corn

  • 1 T oil (I used coconut)
  • 1/3 C popcorn (unpopped, obviously)
  • 2 T sugar

Heat oil over high heat in a heavy bottom pot with a lid. (If it’s your first time popping popcorn on the stovetop, choose one that looks bigger than you need. The popcorn will really increase in volume and it is a real pain when it overflows!) Add the kernals, then sprinkle the sugar over. Top with the lid. Once the kernals start popping, shake the pan back on forth to keep everything moving. Once the popping slows, take it off the heat, give it a few more shakes, then dump it into a bowl. If you like things salty sweet, give it a couple dashes of salt.
